TASTING NOTES: A fresh and balanced wine with vibrant flavours of apricot, peach, melon, and a touch of orange zest, honey, walnut, and almond. It’s smooth, rich, and lingers on the palate.
PAIRS WITH: Spicy slow-cooked lamb, tagines, biryanis, grilled aubergine, octopus and cheese like halloumi and manchego.
SERVE ME: Slightly chilled, pop in the fridge for half an hour.
Fulvio Bressan represents the 9th generation of winemakers carrying the Bressan name and working a small plot of land in the Farra d’Isonzo since 1726. And given the way he runs his winery, you would think that he might just be channeling all 9 generations of prior expertise, with little care for how the rest of the world might make their wines.
Carat is a distinctive white blend of Friulano, Malvasia, and Ribolla Gialla and a true representation of Friuli’s heritage. The vines, averaging 70 years old, grow in clay and limestone soils enriched with layers of sandstone. The grapes are softly pressed, with the flower must fermenting for 28 days on the skins. After ageing for two years in 20Hl wooden casks, followed by stainless steel and bottle fining, the result is a complex wine with vibrant stone fruit flavours and a refreshing mineral finish.
