ABV: 13.0%

GRAPES: Assyrtiko, Malagousia, Vidiano and Aidani 

TASTING NOTES: A fantastic, complex, amber-coloured wine with intense aromas of citrus pith, nutmeg and herbs. The palate is rich yet hugely enlivening with real texture and grip.

PAIRS WITH: Asian seafood dishes, I had recently with soy, ginger & chilli sea bass with pak choi and it was perfect.

SERVE ME: Chilled but not too cold, allow half an hour for the wine to breath

Apostolos Thymiopoulos is Greece's best red winemaker - a master of the Xinomavro grape variety in all its styles (many of which he pioneered). The core of the range is a series of Xinomavros from Naoussa, each of which offers a unique take on this world-class grape variety.

Blanc des Côteaux is something entirely new - his first premium white wine. The Vidiano and Aidani are fermented in clay amphorae, and everything is given around five days of skin contact.
