TASTING NOTES: Dried floral aromas, supported with orange blossom, honeysuckle, apricot and fennel with some subtle tannin and dried herb.

PAIRS WITH: Mackerel, mushrooms, pork chops and sheep's cheese.

SERVE ME: Chilled

Grapes were destemmed into a variable stainless steel tank with fermentation taking place slowly via indigenous yeasts. After 17 days in contact with skins, the wine was pressed then aged in tank seven months before being bottled unfiltered an unfined.
