GRAPES: Falanghina & Trebbiano

TASTING NOTES: Trebbiano and Falanghina work in tandem to offer plenty of stone fruits on the palate, with more subtle flavours of gooseberry and hidden away and some definite licks of yellow apple and quince. Time spent on skins offers just enough tannin to keep things interesting, backed up by plenty of minerality. A great intro into skin contact wine.

PAIRS WITH: White meat, firmer fish, grilled vegetables

SERVE ME: Cold, pop it in the fridge for a couple of hours.

Fattoria di Vaira is one of the largest biodynamic farms in Italy. Here they cultivate vegetables, grains and cereals, and produce fresh cheeses, olive oil and honey. After several years of applying biodynamic practices, their soil has been restored, reaching a degree of purity similar to wild soil.
