Grown from organic, dry-farmed bushvines on a plot right on the border of Paarl and Swartland. The grapes are very concentrated due to the low rainfall. With this in mind, the grapes are picked early in the harvest with 50% going towards whole bunch fermentation. This gives the wine fantastic bite and structure. Natural fermentation occurs in stainless steel with native yeasts.
Rook en Spieels is a collaboration project between two old boy winemakers in South Africa who are supposed to be retired. They run a negociant cellar where they buy fruit and juice from other growers to make some exceptionally fun low intervention wines.
