After 25 years as a cellar master for major Maremma estates, Antonio Camillo launched his own project in 2006. He is an advocate for "natural" winemaking, utilising organic practices, indigenous yeasts, and minimal chemical intervention. He manages approximately 9 hectares of vineyards, many featuring old vines (40–50 years old) that produce more concentrated fruit.
His Morellino di Scansano DOCG is a quintessential expression of Sangiovese from the Tuscan coast. Fermentation typically occurs in stainless steel with 12–15 days of skin maceration. The wine is often aged for 6 months in cement or stainless steel tanks and 3 months in the bottle to preserve fresh fruit flavours
