TASTING NOTES: Pale lemon colour, aromas of lemon, peach and pear combined with subtle notes of pine and chamomile. In the mouth, it has medium body with crisp acidity. Peach and lemon stand out while notes of pine, rosemary and pear complete the set.
PAIRS WITH: Fried fish with garlic sauce, grilled sardines or octopus.
SERVE ME: Chilled, pop in the fridge for a couple of hours
For about 15 years now, the Tetramythos Winery has been cultivating its vines in Diakopto of Aegialia, with the principles of organic farming. The vines are located at an altitude between 450 and 1000 meters, while the limestone soils give a very special character to their wines. Highlighting the unique microclimate of the area is the main goal, while the minimal, almost zero interventions during winemaking, enhance their uniqueness.
Made with fruit from organic, unirrigated vineyards, it is fermented in clay amphorae and flavoured with pine resin from the trees surrounding the vineyards. The difference between this and their conventional Retsina is the natural approach to winemaking. The wine is unfined and unfiltered. Retsina has been around for thousands of years, and this is the closest thing you'll get to what it used to taste like.
