TASTING NOTES: Golden coloured with notes of dried tropical and stone fruits especially apricot, a hint of flowers, and a peppery finish. Has a nutty character with a distinct savoury minerality.
PAIRS WITH: Roasted game, pork, or grilled chicken. Could also handle a little spice.
SERVE ME: Chilled, pop in the fridge for a couple of hours.
Pheasant's Tears is a joint venture between John Wurdeman and Gela Patalishvili. Since 2007, they take care of their grapes with very low intervention, using wild yeasts during vinification to best showcase the Kakheti terroir. The name 'Pheasant's Tears' comes from an old Georgian tale claiming that only the best wine could make a pheasant cry.
100% Rkatsiteli from the village of Bodbiskhevi in Khaketi, direct pressed and fermented with wild yeasts in stainless steel. Unfined, unfiltered, with no added sulphur.
