TASTING NOTES: Slightly funky but very drinkable. Inky purple in the glass, with aromas of violets, dark and red berries and a gentle earthy note. The palate is silky and well structured, delivering flavours of black plums, soft oak and more berry fruit, finishing with big tannins and bright acidity.
PAIRS WITH: Hearty dishes, stews, game, duck

Pheasant's Tears is a joint venture between John Wurdeman and Gela Patalishvili. Since 2007, they take care of their grapes with very low intervention, using wild yeasts during vinification to best showcase the Kakheti terroir. The name 'Pheasant's Tears' comes from an old Georgian tale claiming that only the best wine could make a pheasant cry.
This Saperavi has been manually harvested, fermented and aged in traditional qvevri (amphorae) buried in the ground. Uses spontaneous fermentation with indigenous yeast and has no filtration and no fining.
