GRAPES: 100% Palomino

TASTING NOTES: Bold citrus, citrus zest and Asian spice aromas. Saline background revealing that it was aged under flor. Fresh in the mouth, complex, full-bodied, juicy, with a little bit of bitterness in the finish.

PAIRS WITH: This will go with a lot of things from fruit, ripe and salty cheeses, smoked ham, mushroom dishes, to dishes with soy sauce and other Asian spices.

SERVE ME: Serve chilled. Stick in the fridge for a few hours.

The Pérez family have been viticulture, estate workers and winemakers for generations. In 2002 Willy Pérez and his father Luis, a professor of oenology at the University of Cádiz, set up their bodega on a hill just northwest of Jerez.
