TASTING NOTES: NON #9’s flavour profile is made out of a blend of blackberries, Stanley plums, and roasted beetroots. Tannin & structure are provided by the use of French oak, Victorian Shiraz grape skins, and black tea. Aromatics from fir pine needles provide an earthy, forest-like aroma, whilst its salinity & spice come from tamari (soy sauce) adding a savoury depth and ancho chilli provides a subtle heat on the finish and all balanced out by verjus. 

PAIRS WITH: Steak, ragu or barbecued vegetables.

SERVE ME: Chilled, pop in the fridge for an hour.

All of the Non range is made out of verjus (Unripe Juice) from Barossa Valley Semillon grapes, which are then flavoured with a stew of fruit, herbal and sometimes savoury aromatics before bottling.
