TASTING NOTES: A pale straw yellow in the glass with greenish tinges. Notes of apricot, apple and pear. On the palate, light and fresh with a cleansing acidity leading to a lingering finish.

PAIRS WITH: Good with lighter fish such as trout or sole.

SERVE ME: Serve chilled. Cool in the fridge for a few hours.

Pago de Tharsys is a historic estate founded in 1808, set within 14 hectares of ecological vineyards in Requena, 70km from Valencia, at 800 metres above sea level. Beneath the winery lies an original underground cellar carved into limestone bedrock, a defining feature that shapes the character of its wines and cavas. This ancient limestone—formed over 30 million years ago—gives the wines their hallmark freshness, elegance, aromatic clarity, and longevity, further enhanced by a unique microclimate created by surrounding woodland and a nearby lake.

Guided by the motto “Unique by nature,” Pago de Tharsys is deeply committed to sustainability and ecological viticulture. The estate works organically, uses solar energy, protects native flora and fauna, and collaborates closely with local artisans and producers. A pioneer of Cava production in the region, the winery has over 50 years’ experience crafting long-aged, terroir-driven sparkling wines, alongside still wines from DO Utiel-Requena and artisanal spirits distilled on site—making Cava not just a specialty, but part of the estate’s DNA.
